My Story

I discovered the power of food early — as something that connects people, expresses culture, and transforms even the most ordinary evening into a genuine experience. That discovery grew into a calling. I built my culinary career through real kitchens, long hours, and an endless appetite for learning — working my way from the foundations of professional cooking to leading my own kitchen as an Executive Chef.

In 2018, I launched my vegan kitchen project, CarlosVeganKitchen, built around a philosophy I deeply believe in: that plant-based cooking can be just as bold, just as creative, and just as deeply satisfying as any other style of cooking. That experience reshaped everything about how I approach recipes and flavor.
